Will the following item work for our MINI's?

That kit isn't really different than what comes with the V1. It's just a power cord with an inline fuse and the telephone type end to plug into the detector.

I would use the one that comes with the detector. That way in the future if you want to add a remote display or other accessory, you can do it. With that ebay item, you wouldn't be able to. Plus you already have everything included to hard wire it.

I actually ordered the same kit from the same guy on eBay. I ordered it at the same time as my V1, not realizing that it came with a hardwire kit (didn't read the description on the V1 careful enough). Not sure if you are in the same boat, but if you've already used the one that comes with the V1 for another vehicle, that guy seems like he knows his stuff and the kit seemed to be of good quality. Fast shipping too!

What is it about that kit that prevents you from using it with a remote display or other accessory?

With the kit that comes with the V1, you get a power block (not sure what to call it) that has 2 jacks for the phone cord. One is for the detector, the other jack is for accessories. If you use that ebay kit, you are just wiring the detector without any accessory jack. I can't see why anyone would need this kit considering the V1 comes with everything you need to hardwire it, just in a larger form because of the little box with the 2 jacks that you hardwire.
