Did it change at all as you accelerated from idle to redline or was it a steady 57 psi?

As soon as you touch the throttle it goes from 42 to 57 quicker than the eye can see I presume it must sense you touching the throttle and increases the voltage to the pump accordingly.

I have got an old data logger off a Pro Mod car which I will fit on for next season, just running out of time at the moment.

What I'd like to know is if you are driving down the road, say in 3rd gear, and you floor the throttle and keep it to the floor - does the fuel pressure stay at exactly 57 psi at 2,000 rpm, 3,000 rpm, etc. all the way to redline?

Yep, if you have a fuel pressure gauge hooked up and visible while you are driving.
