I'm saving my money for a trip to LA, but curious...what exactly does Jan do to the car? Just an ECU adjustment or is there more? If the ECU is adjusted and something happens (say MINI service does something to undo it), can it be reapplied?
Jan puts your car on a dyno, attaches a laptop to the ecu, then runs the car to redline. He then waves a magic wand over the laptop, reloads the new mapping to the ecu, then runs the car to redline again. He continues this black magic until he finds the sweet spot on both the torque and hp curves for your car. It's the cheapest hp/torque you can buy for your MINI and it smooths out the power across the rpm range.
I had it done and couldn't believe the difference. It's one of those "why didn't I do this sooner" types of things. A bonus is that the dealer can't tell that you did it.

His "dark arts" are not visible to the undeserved eye of the Mini service professional.In all seriousness,it is invisible on the ecu.

So, what are the parameters adjusted in a tune?
1. Ignition Timing
2. Air/Fuel Ratio
3. Traction control?
4. Anything else?
Well... AF's aren't really adjusted, fuel trims are (Resulting in altered AF's). Redline can be adjusted, and typically is. I'm sure there's more, but I can't recall all the ECU parameters right now.
