How many coats of wax?
OK I waxed with Carnuba last weekend. I had hoped to put two coats on as some people think that its good to have more that one coat.
Two Q's
1) Is two coats of wax redundant or is it good?
2) If two coats is good, can I do that on two separate days if I wash in between coats?

This always seems to be an interesting topic with lots of opinions. It all starts with te base coat. The application will depend on the quality of wax used as some can build up and yellow. You do need to let the wax "cure" for 24 hours before applying another coat. Depending on the quality of product, additional coats can add depth.
I personally used one coat of Klasse All In One, then three coats of Klasse High Gloss Sealant. This is followed by three coats of P21s. Lots of work, and yes kinda obsessive, but creates a shine that I enjoy.
Lots of people use Zaino products with a coat of carnuba over that (P21s, Pinnacle Sovereign) to create a great shine as well.
Really depends on personal preference, your budget, results desired and of course how obsessive you are with waxing.

Being a Zaino addict, the more coats you put on only means a deeper, smoother shine. As I understand it, Zaino doesn't deteriorate (only alcohol can strip it). Here's my mCS with 5 coats over 2 weekends.

Since I was going to be driving my MCS throughout the winter here in Rochester, NY and having read that Zaino was fairly good in resisting salt, etc., I was able to get 12 coats on before the weather turned. Now that things are improving, I've been able to wash the car a couple of times and I was glad to see that water still beads up quite nicely and there is still a noticable shine. This is pretty impressive as we had a very snowy winter (~ `130" of snow) with lots of salt on the roads. Many times my poor MINI looked like a salt lick.
I'll be doing the Dawn wash and starting all over again once it decides to stay warm.

Dawn will not strip the Zaino. I don't know why you would want to, but if you wanted to strip Zaino, you would need to use a commercial (body shop grade) wax and grease remover or isopropyl alcohol.
One of the many cool things about Zaino is that you add to it over time rather than strip it and start over again.
Considering the winter you had, you might think about claying the car and then adding a coat or two of polish.
