What product for black roof?
There is no best paint care product! My choice would be Klasse All-in-One (AIO) to prep the surface, followed by a coat or two of Klasse High Gloss Sealant Glaze (HGSG or just SG). Klasse is an acrylic synthetic sealant with excellent gloss and depth. SG can be difficult to remove if applied to heavily, but a light spritz and wipe down with a quick detailer makes it easy. My preference for use with Klasse is Sonüs High Gloss Acrylic Spritz.
Any good glass cleaner is fine for use on the sun roof. My two favorites are Eimann Fabrik’s Clear Vision and Stoner’s Invisible Glass. I recommend getting both for use on your window. They must have different active ingredients because often times when there is a problem that one won’t deal with easily, the other one handles without a problem. Use old newspaper (not new since the ink will run) on your glass because it is lint free.

I am also a recent convert to the Klasse All-In-One, but I had a very difficult time with the Sealant Glaze. I just did three coats of the AIO on my roof and then topped with one coat of the Sealant (but found it very difficult to remove, even in small quantitities). I then topped with a very light coat of Zymol creame wax for a nice sparkle.
Could you go into more detail on how you apply the Sealant Glaze? It says to apply with a dry cloth (as opposed to a moist cloth, like with the AIO). It dries almost instantly to concrete-like hardness. How are you going about it precisely?

To apply Klasse SG I use a small square (3”-4”) of soft, clean dry cotton - - T-shirt material is great for this. A small spot (smaller than a dime) of SG and then wipe it on (no need to rub). On dark paint it’s fairly easy to see when you have run out of product, but on lighter colors (like my wheels) it’s very hard to do a thin coat. It takes practice and experience to get a really thin coat. If you fill a ounce and a half shot glass with SG you should be able to do the entire car - and maybe have a little left over to do a second coat on the front of the car.
In my experience there will almost always be some spots where it is hard to remove the SG - - maybe it takes many of years to learn the right touch to get a perfectly even thin coat with no thicker spots. I use microfiber towels for removal, turning frequently - - maybe three or four towels for the entire car. If there are any areas than resist removal with light rubbing, then I spritz on a very light spray of Sonüs QD and wipe it off with a dedicated MF towel. Sonüs should be available wherever Klasse is sold.
I’ve only had my MCS for about six weeks and am doing my paint prep one section at a time. On my white roof I’ve only applied carnauba, but when I get serious about it I may use Zaino there because of the difficulty I’ve had using Klasse on white paint.
