There are a few threads on here of people doing it, but you'd have to tape it all for each coat. The Plasti-Dip makes a rubber like film, and if it touches the tape, it'll rip off when you take the tape off. So basically you'll have to spray one coat on it, and rip the tape off as soon as you can. It's possible, and it looks good, but it takes lots of time.

I sprayed Mine. Check gallery. Don't worry about the tape so much. Tape to protect the window above the beltline and Leave a 2" gap below the beltline before the tape. If done correctly you will be spraying ONTO THE PAINT as well as the beltline. Spray several layers to make a thick surface. (about 5 layers) Once you lift the tape on the lower half it will peel up a little on the car paint section. (A fresh waxing before you spray will make this even easier.) Lift the Plastidip on the bottom (on the cars paint) and remove it. It will peel off the paint and leave the Beltline behind.
Because there is a gap between the beltline and the cars paint, it will not connect the Plastidip, and thus make it easy to get an even coat. The Plastidip will then peel right off the paint.
Many people are afraid to spray this stuff on their car because its "like" paint. But its not. No worries, if you overspray a little it come right off. No need to tape off like its in a paint booth.
-ALSO, doing it this way (leaving a gap FOR oversrpay) keeps you from having to lilft the tape between each layer.

I did this by my self but 2 pair of hands would have been easier. I used the blunt edge of the knife to move the rubber trim and tuck the vinyl wrap under as I went along. (there is not much tape spare if you make a mistake so I bought 2 sets).
Good luck
