R56 195-55-16 to 205-50-16?

I have just a regular Mini 2009 with the wheels in the pics.

Would I have any problem going to a 205 50 16?

No reason other than a few more options at that size.

Plenty of people do that! You have to be mindful of the wheel offset to avoid rubbing when the suspension is loaded.

That's fine. 205/55-16 is another common tire size for OEM suspension and wheels with better tire selection and taller sidewall for more comfort.
