So, for the MINI, do you get the 67.1 mm centerbore 4x100 +35et ones and use 67.1 to 56.1
hubcentering rings, or the 57.1 mm centerbore ones and just run a half a mm clearance at the hub?

You will need whatever size CB the wheels is to 56.1 which is the MINI size.

Thanks. I just found the hub centering ring section of your website,
which lists both 57.1 to 56.1 (I didn't know they made them that thin!)
and 67.1 to 56.1 so the answer to my question was there all along.
