E-brake hitting the arm rest problem

Does anyone else have the problem of the e-brake hitting the OEM arm rest?

Not mine either. Not even close. I don't think I could make it hit it if I wanted to. There's at least 2 inches between when it's fully engaged.

Maybe yours needs adjustment?

Nope. Perhaps yours needs to have the pads checked. Maybe there is an adjustment either internally or externally.

How would I adjust the armrest?

The adjustment that is needed is to the e-brake, not the armrest. You probably should check your rear brake pads and look into the e-brake adjustment.
