manic tune OR gooFy coolent problem's!

about a 2 week's ago my buddy got him self a manic stage 2 on is 07 coop s.. we've ran into some problem's, pretty much narrowed it down to the HPFP...
he got the Detroit tuned super oil kit / and he swap out the oil filter house seal's. along with feed line and return line! no more leaks.

so i was out driving around trying to troubleshot why when you get on it from 4k to 4'5k it stumbles then kicks in ,so i was driving around doing 25 to 45 mph range not betting on it taking it easy, low coolant light came on yellow and red. and fan's kick on high. got over and pop the hood and check the coolant reservoir and the coolant leave was good ! got it home let it cool off and want to start it up and the fan's installation kick on. i try'ed to re-bleed the system thinking he mite have did it wrong, nothing fan's still kick and lights stay on. so am thinking the coolant temp senosr mit be bad or maybe the thermostat is bad > but the wired part is no check engine lights or code'!!
and no heat
any idea ware i should start looking or how can i test to see if the senor is bad.

oh yeh i can grab the coolant line and its pretty much ice cold, after being ran for 20 mins
