Multiple Key Fobs

Is it possible to have more than 2 keys programmed to the car?

I don't see why not. Your bigger issues are acquiring another one, programming it, and cutting the back up key (enclosed in the FOB)

the dealer is the obvious source but you may not want to pay their price.

Well on that note is it possible to program a key that was previously programmed to another car without going to the dealer? I just made a purchase in the classifieds and he threw in a old key fob he had and didn't want anymore.

No, not even a dealer can program it. The key will need an immobilizer smart chip matched to the car, and it is available only from BMW/MINI.

In the 1st gen, the immobilizer unit can handle up to 10 keys. Don't know the number for an R56.
