I saw a few tidbits here and there on other forums about this but not very helpful.
How easy is it to remove the back seat out of a 2009 Cooper S?
I was looking at it and didn't see any latches or anything.
Any ideas or a quick walkthrough would be much appreciated

It's ridiculously easy. 
Pull straight up on the bottom half, there are two clips that hold the whole thing on. You might have to pull pretty hard the first time you do it. Slide it off.
Underneath you'll see the bracket that holds the top half on, there are 3 torx screws (can't remember the size, but they're big). 2 in the front and one in the back. You have to wiggle the carpet out from underneath the seat to get to the back screw.
After you get the screws out, lean the seats forward until the pins holding them into the wall slide out. The seats are connected by the bracket in the middle, so they're a bit wobbly when you take them out.
After that you'll have no back seats.

No need to remove the screws for the top, they click into place. Once the bottom is out, lean the tops forward and take a flat head screw driver and push the sheet metal latch towards the opposite side seat top and lift up on the seat. you will need to pull the middle free then the side, repaet for the other side.
