AC Compressor only kicks in on low

My 06 R53 wasn't spitting out cold air so naturally I topped off the refrigerant. I noticed that the compressor only turns on when my AC is on "low". My thermometer reads about 58-60°F on low, but when I turn the dial just on click up to "60°" my thermometer instantly shoots up to show that the AC is actually producing about 75° air, and then the pressure gauge shows that the compressor has turned off. Did I do something wrong? Anybody have any suggestions?

Did you overfill it with refrigerant?
There's a pressure switch that will turn off the compressor if the pressure gets too high.

There's a chance I did, but the compressor still works in the low setting so I don't really see how it could be that issue. Again maybe it is, this is my first time refilling an AC unit so I don't know much about it
