If the MINI has flipped 180° and is on its roof, is it then more, or less safe than the SUV (having the high center of gravity). Conversely, is the SUV then more, or less safe than the MINI, when the SUV is upside down (now having a much lower center of gravity).

Point being, it was the guard rail that flipped the MINI - The velocity (which would most likely have been pretty much bleed off by said guardrail) and other obstacles that would have kept it rolling . The higher CG (and sloppier suspension) will certainly get the SUV rolling quicker (w/o an obstacle present), but the same conditions apply once it has started rolling.

BTW, glad to hear you're OK.
