Just like the title says, is there a difference in the chrono and nav package speedo and tach's ?

Im just wondering where the fuel guage and oil temp are on the nav package.

It had crossed the back of my mind if it were possible to do a nav retrofit but instead of the nav system, set up a computer. Is this even possible?

No diff....

There is no oil temp on the Nav and the fuel gauge is located below the nav screen. As for the computer, anything is possible depending on how much you want to spend.
