Hi!
My wife and I each have MCS. Mine has the dual pods and the chrono gauges in the center. Her's is the tach on the steering column and speedo in center.
If I were to get the dual pods and the chrono gauges for the center, would this be a simple plug and play type of install or would I be looking more into it? And if so, what? extra wiring, tapping wires, etc?

It's not a simple swap. The center speedo won't work in the car with chrono and the dash speedo won't work in the normal cooper.
It's the wires. Unless you feel adventurous and like basically gutting your car (including a reprogramming or two) to make the normal speedo work in your chrono car ... Not worth it.
There's a thread somewhere on this site where people have done the same exact thing.
Furthermore, the swapped gauges will not report the correct mileage too.

Coding is required...and the miles on the odometer is stored....so you will have issues. The parts have the vins stored....NOT AN EASY SWAP...many have tried it...most have gone back.
