reset adaptive throttle and AT settings

Is there a way to reset this stuff without having to go to the dealer?

No, Not unless you have INPA, DISv57 or ISTA software (and the appropriate hardware interface) available to you. Disconnecting the battery or pulling fuses will not clear engine (DME) or auto tranny (EGS) adaptations.
