Pretty much all of those were done with whats commonly knows as a "rig"

Basically, its a camera mount that keeps the camera very steady (or at the same bumps exactly as the car moves) and then its up to the photographer.
I think the most common approach is keeping the shutter open just a tad longer and then there is some post processing in photoshop that usually takes place as well.

Or, you can just hire someone to do it for you - lol

Good luck!

I'd suggest you look in the "Minis in Motion" thread where most of your questions and more have been answered.

Filmtools is an excellent source for camera car mounts.

www.automotiverigs.com shows you how it would look. not sure why they posted pictures of the rig itself, it shows you pretty much what you need. you just need to figure out how to mount it under your car

Mine (the last one) done with my homemade $10 aluminum bar between the headrests. Most useful for video.

This could be an inexpensive and simple option for in-car mounting:

It's called the Gorilla Pod. They say you can wrap it around anything and it will hold your camera there. The small one is for point and shoots, the big one is for SLRs. You can find it at your local camera shop or someplace like PhotoJojo. Cost is about $50.
