Looking for a restoration project...

I am looking for a project car that I can ultimately race in the VARA. My fiance's dad has 2 Porsche 356 that he has restored and her uncle has a 356 that he races. He says that the MINI's smoke just about everyone in their class. So basically I'm looking for something that doesnt necessarily have to run, but can be built from the ground up. Im looking for something in the $2500-3500 range, so if anyone knows of anyone who has one sitting in their grandmothers garage...

Or even if you know of a web site or somewhere to look, I'm kinda running out of ideas.
