Bolt on performance parts advice?
2016 Countryman S All 4. Just installed the Burger JB+. Feels good. Goal is to install a new hop-up every 3000-5000 miles. Next will be an intake and then an exhaust after that. That will probably do it for motor and then Ill work on the suspension.
I am not looking for racing performance but better than stock feel and sound. Not afraid to spend but do not want or need to spend 'racing' level money. Can anyone recommend the following?
-A good intake system that will work well in an environment like Colorado?
-A good cat back exhaust that will purr and growl a bit more than stock but NOT be too loud or 'ricey' and hopefully let my car breathe a little better when combined when combined with an intake.

I'm on the same quest here in Colorado (Denver area). So far I've done a Manic stage one ECU upgrade, K&N filter, a M7 catch can and hot side turbo hose that takes out the baffle. I recently replaced the serpentine belt and tensioner pulley myself and saw that the front passenger sway bar link knuckle was blown. I ordered the M7 Maxx links and will be putting them on this week. My next upgrades will definitely be the NM cat back exhaust then a Mini Madness 22mm rear sway bar. This car is truly my hobby!
Save your money and intake and exhaust aren't power gainers on the R60. A downpipe will make power, but then you have to deal with a tune as you will get a check engine light.
First Engine mod and bang for the buck would be a Forge intercooler. This will cool the air charge after the turbo and gain you HP.

Intercooler, FULL exhaust, tune would be my priority. If you do get a cat back, make sure you get one that can be upgraded cat-forward in the future.
There are lots of dubious "cold air" intakes out there and one $500 gorgeous carbon fiber one (ECS), but I'm not sure any can offer substantial improvement over stock (especially for the money).
