When adding an AUX input, does the HK stereo have a choice for AUX?
 
seems to me, stereos that offer an aux input also have a "AUX" on their selector / dial. If my car didn't come with aux, how would my stereo recognize this signal?

You need to install the aux cable. The headunit only displays the aux selection if it detects the cable.
