What the heck is the trick to getting the shock tube
Back into the steering knuckle?
The older ones came out hard and the new ones don't want to go in....
Is it ok to sand the paint off of the new ones?

Couple of tricks:
-Sand or wire brush/wheel any rust or grit out of the sleeve portion of the spindle.
-Lube the strut housing.
-When using the floor jack under the spindle, don't use a lot of pressure, use minimal force and physically wiggle and shake the spindle itself (I grab it by the rotor) so that the strut works it's way in on it's own. If that doesn't work, try one hand on the rotor, and with the other, use something to try and separate the pinch flanges.

You can take a pry bar and tweek the opening on the back side of the knuckle after the bolt has been removed. Using a floor jack to lift the strut into place works just don't get carried away-----patience is required.
