Anybody know of an off the shelf 15x7.5 36 et rim?
I cannot seem to find any without going the custom route with Kodiak.

K1's maybe but you might be better off with one of the +40 to +43 wheels on the market and some spacers. If you use spacers you will need longer bolts or studs.

Is that the offset you have to use in a 15x7.5 to get a 225 to fit? Any idea how far that will stick out past the wheel arch?

Ben,
I don't see this size as a viable option for you. 15x7" rims for the MINI with et about 40-45mm is easy to find and tirerack and edgeracing both stock these. Once you get wider in 15" then you are looking at 15x8 and 15x10" in 5 and 6 bolt patterns and I did not find any in 4x100 nor any rims in 15x7.5" To get 7.5" you'd have to go with a larger sized rim, they are available in 16, 17, or 18" rims.

So for practical reasons for the MINI's 4x100 bolt size the 15x7" is the best choice unless you go custom.
Try talking to alex@tiresrack about your options on offset.
A common choice is the gravity cast/ shot peened Kosei K-1 Racing rim 15x7" offset 38mm $129 each in silver or white. weight 13.5 pounds

Or the gravity cast/spun/shot peened Kosei K-1 TS in 15x7" with 38mm offset 10.6 pounds $149 each in light grey, orange or silver. Low weight for the modest price and good strength.

A favorite but costs more-
The semi-solid forged (strong and light) SSR Competition in 15x7 et42mm 9.3 pounds each for $279 per rim in anthracite or silver with machined lip
