Looking to buy wheels for my mini and I stumbled upon a great deal; just wondering if that offset is a bit much. I'm lowered about 1.2inch with tein s-techs.

Compared to OEM 17x7" and stock tires
Your proposed wheel and tire will stick out about 24mm or 0.9" more. There is clearance for the suspension.
1" out is not bad if you have enough negative camber. You may be close to rubbing in the rear or under load, if so you can easily trim the inner plastic arches with a dremmel.
It will be a close fit with some risk for rubbing.

You will probably have a lot of rubbing in the rear, especially under suspension load. Probably more than trimming the plastic wheel arch and wheel well liner can resolve.
I had 17x7 et38 with 215/40 tires, lowered about 1 to 1.2" (H&R springs) and had rubbing that I could barely resolve with plastic trimming. You plan to go with a wider wheel, more offset to outside, and a taller tire so I would guess too much rubbing to resolve with plastic trimming.

I have run 17x7" et 42 and 205/45-17 and 1.5" drop and did OK no rubbing on a 2003 MCS. If you use an offset of about 40-45 you'll have more clearance.
Another option is to go with a slightly smaller than OEM tire diameter size-
205/40-17
215/40-17
But you get a stiffer 40 series sidewall and less tire selection.
Remember too that a 17x7.5" wheel can be heavier (than a 17x7) due to the wider width.
Changing tires to 215/45-17 gave me slight rubbing in the rear.

I ended up getting 17x8.5, I forgot the offset and don't really want to check right now, but it's working well with my 205/45 set up.
So far I have no rubbed on any occasion, even with another set of wheels in the back
