235/40R17 on 17x7.5 et40? Trim fender?
Is it due to the alignment or causing your alignment to be out of wack?

I'm not sure how much of an alignent will fix it. Just a really wide tire(but they sure are fun!!) I have a fair amout of oversteer. I'm gonna try a 225 next.
I rub as i come off interstate bridges that need repair, or over pot holes. The tire rubs the wheel well up front. Out back it rubs on the outer tip of the contact patch at little bit. I have to adjust the camber on the rear every now and then. So i'm sure its throwing off the other alignment parameters.

Get a pretty aggressive rear camber to tuck the wheel under the rim. Something like -1.8 is still within spec. Just know tire wear can be compromised.
Rent a fender roller and roll it out a little to see if that will give you more clearance.
Lift the rear a little with a spacer (1/8 inch perhaps) and some longer bolts.
Get narrower tires as you suggest.
Or q combination of all of the above.

Best thing I ever did was get some ASTs with Vorshlag camber plates. I have the GTS race version with really stiff springs but it is still tons better than my previous suspensions including the OEM sport suspension. You can get a street version with lower spring rates. With the pillow mount added onto the rear, and adjusted to a dampening of only two clicks, I am smiling at every bump and rough road now, even with the stiff springs.
What was your previous suspension setup, and what changes did you notice with the switch to AST?
I have the AST 5100 which is rebound adjustable. My previous coilover was the Eibach Multi-pro R1 which I think is poorly designed and has all sorts of problems with height and rebounding adjustments.
I noticed after the change that it is now comfortable on the street with no banging noises. With the lowering of only 1", the extra ride height allows me to go over bumps within hitting the undercarriage. The turn has improved which is prompting me to eventually change out the rear sway bar to something smaller than 22 mm. The back seems to wip out out quickly now into oversteer. It is quiet and compliant in street setting and just a cornering deamon when you push it. With the GTS springs, 450 in/lb front and back, almost all the lean is gone. I may not get much of the fourth wheel lifting anymore.

Any chance you have that number for a 235/40?
Google is an awesome resource where you can search all kinds of things. In this instance plugging in "tire size calculator" can make you look as smart as dan!
