the "letter" roads of SW St. Charles county are pretty good. Defiance / Marthasville / Dutzow / New Melle area are some of my favorites. Wildwood west, take county T through Labadie of MO100. MO94 is a nice drive, actually from Defiance to Jeff City, with hilly/curved parts and then some nice cruising in between. Just avoid weekends when it's crowded and when folks are leaving the wineries.
If you're making a day of it, Hwy 19 from Eminence north is a delight; about 35 miles of posted-30 curves and hills. So is MO106 from Eminence to Ellington (at MO21 junction), but more of a scenic drive through woods, not much development or traffic. Letter roads in those counties also are generally a lot of fun; you're in a hilly part of the state, so minor roads go up/down/around. That makes for great motoring!
HTH. I have the motorcycle passion also, so much of the fun-to-ride places translate into great motoring roads. Google "motorcycle roads" for a location and you'll usually get some good ideas of what would be fun to try.
