You could put a trackbar in and buy a Schroth harness made for a trackbar....I'm not sure if the one that works on the regular hatch would work on the coupe.
I understand the coupe is built on the convertible's platform, so if they make a trackbar for a convertible, maybe that would work?
It's also possible that the seat belt locations are already there, under the covering. If they are, all you 'd need to do is buy the appropriate seat belt socket and bolts, then a regular harness would work. I think I'd check that first!

At some point this summer I may pull some trim panels out and see what's underneath, but the most promising location in a Coupé would probably be to tie in to the unibody between the B and C pillars. There's likely to be metal that's strong enough and high enough that you wouldn't have problems because of the angle of the shoulder belts. Further back you run into the bulkhead between the boot and the cockpit, which would require an awful lot of cutting and fitting to mount a harness bar (since the bulkhead itself is just thin sheet metal and plastic, and not able to take the strains of a racing harness.).

I picked up the bar from AutoPower. Installed easy using the seatbelt towers. One plus of the convertable's chassis.
Only issue is that the bar sits a bit high. Scroth recommends that the shoulder straps be parallel to 45deg below the shoulders.
That said this is a huge improvement over using rear hatch anchor hooks.

Finally bit the bullet and going to get a custom harness bar made for my Coupe. Droping it off next week and should have it back by 22 Sept.
I'll let everyone know how it works.
Having them make a harness bar that is removable and 3" wide camber lock harnesses.
Wish me luck

The bar isn't listed on their site. Just give them a call and ask about the Mini Coupe bar. http://www.autopowerindustries.com
I did a 6 point harness using this bar and VAC Motorsports Mini mounting pieces. FWIW Schroth sells a 5/6 point DOT approved harness.
