If you have it set in Gregarious Fool Mode, the passenger can open the door if the fob is within range of the car.

This is correct and if it works any differently there is something wrong with the programing of the computer in the car.

without opening the manual, how do you program these things? and is there an option to set the alarm differently so it beeps when you set it?

That is why they make a manual for the car. So you can open it and learn these things.

If you have the alarm system yes. If you do not have the alarm system then you can not get it to beep.

You select Car Settings on the NAV screen. It should be fairly obvious from there.

Wont read the manual, and want to annoy people around you when you set your alarm. Hmm, you're working up some bad karma there PoktRkt.
