When I got my first MINI it was an R53 and the first thing I did was get rid of the runflats and got hankook 225/45/17 (Cadillac spec'd) tires that mounted on stock MINI wheels. With a slight camber adjustment there were NO PROBLEMS.
OH,I forgot to mention that I put in 20mm spacers all around because I wanted to fill the wheelwells. Car looked GREAT and handled really well.
Today my R56 JCW runs 235/40/17 shoes and is lowered 2 inches. It looks great, too.

If I understand you correctly, my response is "most shops are not going to be willing to work with wheel and tire sizes that are different from stock. If the tires are radically different that stock, like putting tall tires on a compact car, the shops are absolutely going to avoid it."
