OK, I want to sign up now for a driving school - but I don't even know where to begin.

What sort of driving are you interested in? If it's autocross, try these guys:

If you are interested in road racing, NASA is hosting a track day at Pocono on July 16th. I haven't run with them before but have with SCDA and had a great time. The NASA Pocono event is $130:

i want to learn things like heal-to-toe and left foor braking.. and just general skills that make me a better and more confident driving on the road - I don't do auto-x
