Zagman is correct. Headliner holders. I just went out and double-checked mine. I have the light colored headliner so it's easier to tell.
The ones in the front of my car have slots because sometimes removal is necessary to service the sun roof. The rear ones appear to be push tabs.

The picture above is taken from the back - like others have noted the discs in the back are for the headliner. The discs above the driver/passenger heads are indeed mics. It will either be a simple slot or a microphone shaped opening on newer builds

Upon further inspection i am inclined to agree that those are mic slots. Mine don't look quite the same but they are clearly not used to secure the headliner. I stand corrected.
Here's what my driver's side looks like with the passenger side the same:
I wonder what's behind the mesh on the upper console?

2017All4, it's interesting that yours look different than mine. Must have been a change from your build to mine. I think you got yours about a month or two prior to me.

Gearhead60, interesting for sure, as I have a build date of 11/15/2017 and I have the microphone looking cutouts above my front seats.
As for your question what is in the overhead binnacle, almost looks like camera lenses doesn't it?? I am sure they are not that, but there is certainly something in there. I wonder if that binnacle cover just simply pulls down to remove or if there are some fasteners holding it up? Anyone have a service manual for these F54's??

No service manual as MINI uses all online resources now. You can buy a subscription to the service if you are an end user.

But I have ZERO cred on this thread, since I can't tell a microphone slot from a headliner holder. Just ask me about how to buy a new MINI, and keep me out of the tech stuff

That's because business is where a person with money meets a person with experience. The person with experience gets the money, and the person with the money gains experience. I've gained lots of experience, and have tried to pay as little for it as possible, with varying degrees of success.

Interesting if they use IR style sensors for temperature readings, could be done, but seems a bit outside that type of sensor's 'normal' use but who knows. My former Subie had an in-dash sensor for the dual-zone climate control, but it was a single sensor for both zones. Not sure how they set up the logic on that one, but it did work to an extent...just not very accurate.
The IR sensor above the start/stop toggle could be used for determining when to switch over to 'night' dash lighting...now I need to try that and see if it toggles the digital speedo from white to orange or not.
Now I need to research and see if there is a way to get into the service manual online without having to pay a repair shop level subscription price. Subaru had various subscription levels for their online manuals that you could download, which was a nice option for those of us nutty enough to download all 300+ PDF's in the 48hr subscription window.
