I was looking to do the same thing with a pioneer AVIC D3; my pops got it installed in his SUV, but is returning it, asked if i wanted it. I don't care if it doesnt fit now, I'll make it fit, lol. My guess is it'd be a fair amount of custom work. You'd have to remove the factory heating controls and drop that down a DIN essentially. I'll def. do a full write up once I get the head unit.
I was looking into this a while back because I already had a 7" from a previous vehicle. The only info I found on conversion kits was that there was one you could order from overseas somewhere but it was a couple hundred dollars. After getting intimate with the interior of my mini while re-doing the stereo I would suggest you look for other options in a single DIN flipout. I have done custom work that includes fabrication before, but this is not one I wanted to mess with. I was disappointed, as I'm sure you are, but good luck with whatever you decide.
